功夫茶用什么茶叶口感好？
一般福建安溪的铁观音为上选，最好是用泉水泡制，口感更佳。功夫茶所用的茶叶，只限于半发醇的福建岩茶，溪茶和潮汕的凤凰水仙一类（均属青茶类）。中国的其它茶类如红茶，绿茶，砖茶，或花茶，白茶等则不适合。因为若用功夫茶的冲法，往往苦涩不堪入口，只有这种半发醇的青茶类为上。习惯上功夫茶最好是用福建的乌龙茶，即闽北武夷山的岩茶和闽南的溪茶。乌龙茶是个总名，其中的暑茶是闽北所产。铁观音则主要产于闽南安溪，故又称溪茶。岩茶和溪茶名目繁多，其中奇种，单丛，名丛大红袍，水仙，一枝春等都是名茶。——潮汕的凤凰山也生产茶叶，也属半发醇的青茶，也是功夫茶的用茶。其名目有水仙（俗称鸟嘴茶），单丛，浪菜等；上引丘逢甲诗的鹪嘴便是鸟嘴茶。凤凰茶也是我国的名茶之一。
功夫茶的泡法及饮法
1.备具：壶、公道杯、品茗杯、闻香杯放在茶盘上，茶道、茶样罐放在茶盘左侧，烧水壶放在茶盘右侧。
2.赏茶：打开茶样罐，让来客欣赏茶叶的色和形。
3.烫杯热罐：将开水倒入水壶中，然后将水倒入公道杯，接着倒入品茗杯中。
4.投茶：按1：18的比例把茶放入壶中。5.洗茶：右手提壶加水，用左手拿盖刮去泡沫，左手将盖盖好，将茶水倒入闻香杯中。
6.第一泡：将开水加入壶中，泡一分钟，趁机洗杯，将水倒掉，右手拿壶将茶水倒入公道杯中，再从公道杯斟入闻香杯，只斟七分满。
7.鲤鱼跳龙门：用右手将品茗杯反过来盖在闻香杯上，右手大拇指放在品茗杯杯底上，食指放在闻香杯杯底，翻转一圈。
8.游山玩水：左手扶住品茗杯杯底，右手将闻香杯从品茗杯中提起，并沿杯口转一圈。
9.喜闻幽香：将闻香杯放在左手掌，杯口朝下，旋转90度，杯口对着自己，用大拇指捂着杯口，放在鼻子下方，细闻幽香。
10.品啜甘茗：三个口是一个品，要做三口喝，仔细品尝，探知茶中甘味。
11.第二泡、第三泡：操作同上。
